Grilled Vegetable Skewers

A vibrant and healthy dish featuring fresh vegetables grilled to perfection with a smoky flavor.

Ingredients

  • 2 bell peppers (red and yellow)
  • 1 zucchini
  • 1 red onion
  • 8 oz mushrooms
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cut vegetables into 1-inch pieces.
  2. Whisk olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper in a bowl.
  3. Toss vegetables in the marinade and let sit for 15 minutes.
  4. Thread vegetables onto skewers.
  5. Grill on medium heat for 10-12 minutes, turning occasionally.

Notes

Soak wooden skewers in water for 30 minutes before using. Use a variety of vegetables for different flavors and colors. Don’t overcrowd the skewers to ensure even cooking.
