Ingredients

  • 1 1/2 cups all purpose flour
  • 1 cup oats
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • Pinch of nutmeg
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/3 cup canola oil
  • 1/3 cup maple syrup
  • 2 cups fresh blueberries

Instructions

  1. Pre-heat oven to 400 degrees and line a 12 muffin tin with liners.
  2. In a large bowl, mix flour, oats, sugar, baking powder, salt, cinnamon, ginger, and nutmeg.
  3. In a measuring cup (or medium-sized bowl), whisk eggs and then add milk, oil, maple syrup, and vanilla extract.
  4. Slowly add the wet ingredients to the dry ingredients. Gently mix until just combined. It’s okay if there are streaks.
  5. Gently fold in blueberries.
  6. With an ice cream scoop or spoon, fill the muffin liners with batter.
  7. Bake for 25-30 minutes, until a knife pulls clean when inserted into the center.

Notes

Make sure not to overmix the batter; a few lumps are fine. Use fresh blueberries for the best flavor and texture.
