Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/2 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine almond flour and melted coconut oil in a mixing bowl until a dough forms.
  3. Press the mixture into the bottom of a greased 8×8 inch baking dish to form the crust.
  4. Bake the crust in the oven for about 10 minutes, or until lightly golden.
  5. Whisk together the eggs, honey (or maple syrup), lemon juice, lemon zest, and salt in another bowl until well combined.
  6. Pour the lemon mixture over the baked crust.
  7. Return to the oven and bake for an additional 20-25 minutes until the filling is set.
  8. Allow to cool completely before slicing into bars. Dust with powdered sugar before serving if desired.
