- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1/2 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- Powdered sugar (optional, for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine almond flour and melted coconut oil in a mixing bowl until a dough forms.
- Press the mixture into the bottom of a greased 8×8 inch baking dish to form the crust.
- Bake the crust in the oven for about 10 minutes, or until lightly golden.
- Whisk together the eggs, honey (or maple syrup), lemon juice, lemon zest, and salt in another bowl until well combined.
- Pour the lemon mixture over the baked crust.
- Return to the oven and bake for an additional 20-25 minutes until the filling is set.
- Allow to cool completely before slicing into bars. Dust with powdered sugar before serving if desired.
