Ingredients

- 1 cup Greek yogurt
- 1/2 cup olive oil
- 3 large eggs
- 1 cup almond flour
- 1/2 cup erythritol or sweetener of choice
- 1 teaspoon baking powder
- 1 lemon (zested and juiced)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Combine Greek yogurt, olive oil, eggs, lemon zest, lemon juice, and vanilla extract in a mixing bowl. Mix until smooth.
- Whisk together almond flour, erythritol, baking powder, and salt in another bowl.
- Combine the wet and dry ingredients and stir until well blended.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick comes out clean. Let it cool before serving.
