Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Combine Greek yogurt, olive oil, eggs, lemon zest, lemon juice, and vanilla extract in a mixing bowl. Mix until smooth.
  3. Whisk together almond flour, erythritol, baking powder, and salt in another bowl.
  4. Combine the wet and dry ingredients and stir until well blended.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean. Let it cool before serving.
