Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped spinach
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Rinse the quinoa under cold water and drain.
- In a medium pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for about 15-20 minutes, or until quinoa is fluffy.
- In a large bowl, mix cooked quinoa, spinach, cherry tomatoes, and avocado.
- Drizzle with olive oil and lemon juice, then season with salt and pepper.
- Toss everything together until well combined.
- Serve warm or chilled.
Notes
For extra flavor, add feta cheese or nuts on top. Store leftovers in the refrigerator for up to three days.
