Ingredients

- 4 cups water
- 1 ounce dried shiitake mushrooms
- 1 cup fresh mushrooms (such as cremini or button), sliced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 green onion, chopped
- Salt and pepper to taste
Instructions
- Bring 4 cups of water to a boil in a pot.
- Add the dried shiitake mushrooms and simmer for about 15 minutes until they soften.
- Remove the shiitake mushrooms, slice them, and set them aside.
- In the same pot, add the fresh mushrooms and cook them for 5 minutes until they are tender.
- Stir in the sliced shiitake mushrooms, soy sauce, and sesame oil.
- Season with salt and pepper to taste. Let the soup cook for another 5 minutes.
- Garnish with chopped green onions before serving.
Notes
Use a mix of dried and fresh mushrooms for a richer flavor. Adjust the level of soy sauce according to your taste preferences. For a heartier soup, consider adding tofu or thin noodles.
