Description

Ingredients

  • 4 cups water
  • 1 ounce dried shiitake mushrooms
  • 1 cup fresh mushrooms (such as cremini or button), sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. Bring 4 cups of water to a boil in a pot.
  2. Add the dried shiitake mushrooms and simmer for about 15 minutes until they soften.
  3. Remove the shiitake mushrooms, slice them, and set them aside.
  4. In the same pot, add the fresh mushrooms and cook them for 5 minutes until they are tender.
  5. Stir in the sliced shiitake mushrooms, soy sauce, and sesame oil.
  6. Season with salt and pepper to taste. Let the soup cook for another 5 minutes.
  7. Garnish with chopped green onions before serving.

Notes

Use a mix of dried and fresh mushrooms for a richer flavor. Adjust the level of soy sauce according to your taste preferences. For a heartier soup, consider adding tofu or thin noodles.
