- 1 pound chicken breast, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons fajita seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
- Cooked rice or quinoa (for serving)
- Optional toppings: avocado, salsa, or cheese
Instructions
- Mix the sliced chicken with fajita seasoning, olive oil, salt, and pepper.
- Heat a large skillet over medium-high heat and add the chicken mixture.
- Cook the chicken for about 5-7 minutes until it’s cooked through.
- Add the bell pepper and onion to the skillet, cooking for an additional 5 minutes until they’re tender.
- Remove the skillet from heat and let the mixture cool for a few minutes.
- To assemble your meal prep bowls, place a serving of rice or quinoa at the bottom of each container. Top with the chicken fajita mixture.
- Add your favorite toppings as desired.
- Allow the bowls to cool fully before sealing them for storage.
