Ingredients

  • 2 chicken breasts, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons fajita seasoning
  • Olive oil
  • Salt and pepper to taste
  • Rice or quinoa for serving
  • Optional toppings: avocado, cilantro, sour cream

Instructions

  1. Mix the sliced chicken with olive oil and fajita seasoning.
  2. Heat a skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes until browned and cooked through.
  3. Remove the chicken from the skillet. In the same skillet, add the bell pepper and onion; sauté until softened.
  4. Combine the chicken back with the veggies in the skillet and mix well.
  5. Serve over cooked rice or quinoa.

Notes

For extra zest, add lime juice before serving. Use different vegetables for variety. This recipe can easily be doubled for meal prep.
