- 2 chicken breasts, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons fajita seasoning
- Olive oil
- Salt and pepper to taste
- Rice or quinoa for serving
- Optional toppings: avocado, cilantro, sour cream
Instructions
- Mix the sliced chicken with olive oil and fajita seasoning.
- Heat a skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes until browned and cooked through.
- Remove the chicken from the skillet. In the same skillet, add the bell pepper and onion; sauté until softened.
- Combine the chicken back with the veggies in the skillet and mix well.
- Serve over cooked rice or quinoa.
Notes
For extra zest, add lime juice before serving. Use different vegetables for variety. This recipe can easily be doubled for meal prep.
