- 8 ounces of whole wheat pasta
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 2 cups vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until the onion is translucent.
- Add zucchini, bell pepper, and cherry tomatoes, cooking for about 5 minutes.
- Stir in the pasta, vegetable broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce to a simmer. Cover and cook for 10-15 minutes, or until the pasta is cooked and liquid is absorbed.
- Remove from heat and garnish with fresh basil before serving.
Notes
For added flavor, consider mixing in grated cheese or a sprinkle of red pepper flakes. Use seasonal vegetables for customization.
