Description

A quick and easy one-skillet chicken dish featuring tender chicken cooked in a zesty lemon garlic cream sauce.


Ingredients

  • 4 boneless skinless chicken breasts (or thighs)
  • Salt and pepper
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • ½ teaspoon red pepper flakes (or more to taste)
  • 1 tablespoon olive oil
  • ⅓ cup finely diced shallots (or red onions)
  • 2 tablespoons salted butter
  • ¼ cup heavy cream
  • 2 tablespoons chopped parsley or basil
  • Prepared broccolini, for serving

Instructions

  1. Pound the chicken breasts/thighs to ½ inch thickness and season with salt and pepper.
  2. Combine the chicken broth, lemon juice, garlic, and red pepper flakes in a measuring cup.
  3. Preheat the oven to 375ºF.
  4. Heat the olive oil in a large oven-safe skillet and brown the chicken for 2-3 minutes per side.
  5. Remove the chicken and sauté shallots with the broth mixture, scraping the pan for brown bits.
  6. Simmer the sauce for 10-15 minutes until thickened.
  7. Add butter and whisk until melted, then incorporate heavy cream.
  8. Return chicken to the skillet, drizzle sauce over it, and place in the oven for 5-8 minutes until cooked through.
  9. Serve warm topped with herbs and lemon slices.
