A quick and easy one-skillet chicken dish featuring tender chicken cooked in a zesty lemon garlic cream sauce.

- 4 boneless skinless chicken breasts (or thighs)
- Salt and pepper
- 1 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- ½ teaspoon red pepper flakes (or more to taste)
- 1 tablespoon olive oil
- ⅓ cup finely diced shallots (or red onions)
- 2 tablespoons salted butter
- ¼ cup heavy cream
- 2 tablespoons chopped parsley or basil
- Prepared broccolini, for serving
Instructions
- Pound the chicken breasts/thighs to ½ inch thickness and season with salt and pepper.
- Combine the chicken broth, lemon juice, garlic, and red pepper flakes in a measuring cup.
- Preheat the oven to 375ºF.
- Heat the olive oil in a large oven-safe skillet and brown the chicken for 2-3 minutes per side.
- Remove the chicken and sauté shallots with the broth mixture, scraping the pan for brown bits.
- Simmer the sauce for 10-15 minutes until thickened.
- Add butter and whisk until melted, then incorporate heavy cream.
- Return chicken to the skillet, drizzle sauce over it, and place in the oven for 5-8 minutes until cooked through.
- Serve warm topped with herbs and lemon slices.
Notes
Ensure chicken is evenly pounded for even cooking. Adjust spice levels to taste.
