- 1 Pineapple, peeled, cored, and chopped
- 4 cups Water
- 1 cup Granulated Sugar
- 8–10 Lemons, juiced
- 1 cup Cranberry Juice Cocktail
- as needed Ice Cubes
- as needed Lemon Slices, for garnish
- as needed Pineapple Wedges, for garnish
- as needed Fresh Mint Sprigs, for garnish
Instructions
- Begin by preparing the pineapple. Peel, core, and chop the pineapple into chunks.
- Blend the pineapple chunks and 2 cups of water until smooth.
- Strain the mixture through a fine-mesh sieve to extract the juice, discarding the pulp.
- Mix the remaining 2 cups of water and sugar in a saucepan. Heat over medium until the sugar dissolves completely.
- Combine the pineapple juice, sugar water, fresh lemon juice, and cranberry juice in a large pitcher. Stir well.
- Adjust the sweetness and tartness to taste by adding more sugar or lemon juice if needed.
- Refrigerate the mixture until chilled.
- Serve the drink over ice, garnished with lemon slices, pineapple wedges, and mint sprigs as desired.
Notes
For a fizzy version, consider adding sparkling water.
