Ingredients

- 1 cup coconut milk
- 1/2 cup fresh strawberries, diced
- 1–2 tablespoons erythritol or preferred sweetener
- 1/2 cup ice
- 1/2 teaspoon vanilla extract
Instructions
- Combine the coconut milk, fresh strawberries, erythritol, and vanilla extract in a blender.
- Blend until smooth.
- Fill a glass with ice and pour the blended mixture over the ice.
- Garnish with additional strawberry slices if desired.

Notes
Store any leftover drink in a covered container in the fridge for up to 24 hours. Shake or stir before serving again as the ingredients may separate. Do not freeze, as the texture will change.
