Ingredients

  • 1 bell pepper, sliced
  • 1 zucchini, diced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, cooking until the onion becomes translucent.
  3. Add the bell pepper, zucchini, and broccoli. Sauté for about 5-7 minutes until the vegetables are tender.
  4. Stir in the cooked pasta and cherry tomatoes. Season with salt and pepper, mixing everything well.
  5. Serve hot, topped with grated Parmesan cheese.

Notes

Feel free to use any vegetables you like, and add red pepper flakes for an extra kick. To make it vegetarian, skip the cheese or use a plant-based alternative.
