Description

A delicious and healthy dish packed with nutrients, combining quinoa and chickpeas with fresh vegetables and a tangy dressing.


Ingredients

  • 1 cup quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 cup artichoke hearts, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, combine the quinoa and 2 cups of water.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the quinoa is fluffy and water is absorbed.
  4. In a large bowl, combine the cooked quinoa, chickpeas, artichoke hearts, feta cheese, red onion, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad mixture and toss to combine.
  7. Serve immediately or chill in the refrigerator for better flavor.

Notes

Make sure to rinse the quinoa before cooking. For a vegan version, skip the feta cheese or replace it with a vegan alternative.
