- 4 Red cherry tomatoes
- 1/2 Red Pepper
- 4 Orange cherry tomatoes
- 1/2 Orange Pepper
- 1 Yellow Squash
- 1/2 Yellow Pepper
- 1 Zucchini
- 1/2 Red Onion
- Olive Oil
- kosher salt and black pepper, to taste
- garlic powder, to taste
- Parsley for garnish
Instructions
- Begin by preparing the vegetables. Cut the zucchini and squash into round slices. Chop the peppers and onions into pieces.
- Thread the vegetables onto the skewers in a rainbow pattern.
- Brush the kabobs with olive oil on all sides, then season with granulated garlic, salt, and pepper.
- When the grill reaches medium-high heat (about 350-400 degrees F), place the skewers over indirect heat.
- Close the lid and cook for 3-4 minutes.
- Turn the skewers using tongs and cook another 3-4 minutes until the vegetables are tender. Take care not to overcook.
- Remove to a serving plate and garnish with parsley, if desired.
Notes
Choose fresh, seasonal vegetables for the best flavor. Soak wooden skewers in water for 30 minutes to prevent burning.
