Ingredients

  • 4 Red cherry tomatoes
  • 1/2 Red Pepper
  • 4 Orange cherry tomatoes
  • 1/2 Orange Pepper
  • 1 Yellow Squash
  • 1/2 Yellow Pepper
  • 1 Zucchini
  • 1/2 Red Onion
  • Olive Oil
  • kosher salt and black pepper, to taste
  • garlic powder, to taste
  • Parsley for garnish

Instructions

  1. Begin by preparing the vegetables. Cut the zucchini and squash into round slices. Chop the peppers and onions into pieces.
  2. Thread the vegetables onto the skewers in a rainbow pattern.
  3. Brush the kabobs with olive oil on all sides, then season with granulated garlic, salt, and pepper.
  4. When the grill reaches medium-high heat (about 350-400 degrees F), place the skewers over indirect heat.
  5. Close the lid and cook for 3-4 minutes.
  6. Turn the skewers using tongs and cook another 3-4 minutes until the vegetables are tender. Take care not to overcook.
  7. Remove to a serving plate and garnish with parsley, if desired.

Notes

Choose fresh, seasonal vegetables for the best flavor. Soak wooden skewers in water for 30 minutes to prevent burning.
