- 1 small rotisserie chicken (pulled & shredded)
- 3 medium-sized zucchinis (diced)
- 1 (6oz) box Stove Top chicken stuffing mix
- 1/2 cup butter (melted)
- 1 (10oz) can cream of chicken soup
- 1/2 cup sour cream
Instructions
- Preheat your oven to 350°F and grease a 9×13 baking dish.
- Melt the butter and mix it with the box of dry stuffing mix; set aside half for topping.
- Add the pulled chicken, diced zucchini, cream of chicken soup, and sour cream to the stuffing and mix well.
- Spread the mixture into your baking dish and evenly sprinkle with the reserved stuffing mixture.
- Bake, uncovered, for 35-45 minutes or until warmed through and top is golden brown.
Notes
For a lighter option, use low-fat sour cream and cream of chicken soup, or whole wheat stuffing for more fiber.
