Description

A comforting casserole combining rotisserie chicken, zucchini, creamy soup, and savory stuffing.


Ingredients

  • 1 small rotisserie chicken (pulled & shredded)
  • 3 medium-sized zucchinis (diced)
  • 1 (6oz) box Stove Top chicken stuffing mix
  • 1/2 cup butter (melted)
  • 1 (10oz) can cream of chicken soup
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 350°F and grease a 9×13 baking dish.
  2. Melt the butter and mix it with the box of dry stuffing mix; set aside half for topping.
  3. Add the pulled chicken, diced zucchini, cream of chicken soup, and sour cream to the stuffing and mix well.
  4. Spread the mixture into your baking dish and evenly sprinkle with the reserved stuffing mixture.
  5. Bake, uncovered, for 35-45 minutes or until warmed through and top is golden brown.

Notes

For a lighter option, use low-fat sour cream and cream of chicken soup, or whole wheat stuffing for more fiber.
