- 1 lb shrimp, peeled and deveined
- 4 cups spinach, washed and dried
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/2 cup avocado ranch dressing
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a skillet over medium heat. Add shrimp and season with salt and pepper. Cook until shrimp are pink and cooked through, about 2-3 minutes per side.
- Combine spinach, diced avocado, cherry tomatoes, and red onion in a large bowl.
- Let the shrimp cool slightly, then add to the salad.
- Drizzle avocado ranch dressing over the salad and toss gently to combine.
- Serve immediately for a fresh spring lunch or dinner.
Notes
Best served fresh. Store leftovers in an airtight container, ideally with dressing on the side to prevent wilting.
