Ingredients

  • 4 cups spinach, washed and dried
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup avocado ranch dressing
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shrimp and season with salt and pepper. Cook until shrimp are pink and cooked through, about 2-3 minutes per side.
  2. Combine spinach, diced avocado, cherry tomatoes, and red onion in a large bowl.
  3. Let the shrimp cool slightly, then add to the salad.
  4. Drizzle avocado ranch dressing over the salad and toss gently to combine.
  5. Serve immediately for a fresh spring lunch or dinner.

Notes

Best served fresh. Store leftovers in an airtight container, ideally with dressing on the side to prevent wilting.
