Description

Delicious and easy muffins made with strawberries and Special K cereal, perfect for breakfast or a snack.


Ingredients

  • 2 tbsp strawberry cream cheese
  • 1/4 cup cane sugar
  • 1/2 tbsp lemon juice
  • 1 egg
  • 2 tbsp nut milk
  • 1/2 tbsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1 pinch salt
  • 1 tbsp baking powder
  • 1 cup strawberries (diced)
  • 1/2 cup Special K Red Berry flakes

Instructions

  1. Preheat your oven to 350°F. Grease or line 6 cups of a muffin tin.
  2. Add the cream cheese and sugar to a mixing bowl, and beat until combined.
  3. Add the remaining wet ingredients (vanilla, lemon juice, egg, and milk) and beat again until smooth.
  4. Mix in the flour, oats, baking powder, and salt until well combined.
  5. Dice the strawberries into small pieces and fold them into the batter.
  6. Distribute the batter into the muffin tin and top each with Special K flakes.
  7. Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean.

Notes

These muffins can be served warm or at room temperature, paired with yogurt or honey for extra sweetness.
