Description
Delicious and easy muffins made with strawberries and Special K cereal, perfect for breakfast or a snack.
Ingredients

- 2 tbsp strawberry cream cheese
- 1/4 cup cane sugar
- 1/2 tbsp lemon juice
- 1 egg
- 2 tbsp nut milk
- 1/2 tbsp vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1 pinch salt
- 1 tbsp baking powder
- 1 cup strawberries (diced)
- 1/2 cup Special K Red Berry flakes
Instructions
- Preheat your oven to 350°F. Grease or line 6 cups of a muffin tin.
- Add the cream cheese and sugar to a mixing bowl, and beat until combined.
- Add the remaining wet ingredients (vanilla, lemon juice, egg, and milk) and beat again until smooth.
- Mix in the flour, oats, baking powder, and salt until well combined.
- Dice the strawberries into small pieces and fold them into the batter.
- Distribute the batter into the muffin tin and top each with Special K flakes.
- Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean.
Notes
These muffins can be served warm or at room temperature, paired with yogurt or honey for extra sweetness.
