Strawberry Mojito

Description

A refreshing twist on the classic mojito, combining mint, lime, and sweet strawberries.


Ingredients

Scale
  • 1 lime wedge
  • 1 tablespoon granulated sugar
  • 34 fresh mint leaves (+ more for garnish)
  • 2 large strawberries (stems removed)
  • 1 oz white rum
  • 1.5 tablespoons lime juice
  • 1.5 tablespoons simple syrup
  • Ice cubes
  • Splash of tonic water

Instructions

  1. Take the lime wedge and rub it around the rim of a glass. Put the granulated sugar on a small plate, turn the glass upside down, and rub the rim into the sugar. Turn the glass back over and set it down.
  2. Add the mint leaves to the glass. Use a cocktail muddler to muddle the mint leaves gently. Cut 1 strawberry into small chunks, add it to the glass, and muddle together. Add ice on top of the muddled mint and strawberry, then set aside.
  3. Take a small blender or food processor and add the other large strawberry, 1 oz of rum, 1.5 tablespoons lime juice, and 1.5 tablespoons simple syrup. Blend until smooth. Pour this mixture over the ice.
  4. Top off the drink with a splash of tonic water and garnish with fresh mint and a sliced strawberry.

Notes

Best enjoyed fresh, but the blended strawberry mixture can be prepared in advance. Adjust sweetness to your taste.
