Ingredients

- 1 can of chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Combine the chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, and olives in a large bowl.
- Whisk together the olive oil, lemon juice, salt, and pepper in a separate small bowl.
- Pour the dressing over the salad and mix well.
- Garnish with fresh parsley before serving.
Notes
