Description

A refreshing and nutritious salad packed with Mediterranean flavors, perfect for healthy lunches.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Combine quinoa and water in a saucepan and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  4. Let it cool after cooking.
  5. In a large bowl, combine cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, olives, and parsley.
  6. Add the cooled quinoa to the bowl.
  7. Whisk together olive oil, lemon juice, salt, and pepper, then drizzle over the salad.
  8. Toss to combine all ingredients.
